Based on an old idea pre-dating refrigeration, this butter keeper (sometimes they're called butter-bells) keeps butter from turning rancid by submerging it under water. The butter is pressed firmly into the top section, and enough water is kept in the lower to cover the butter once it is lowered in. To serve it, just place the top part, butter side up, on the table. Butter stays soft because it's not refrigerated.
